I love snacks! In between meals I am always craving something nice and sweet and mostly those that I grab are not very healthy. Although these are not super healthy (they have plenty of syrup!), these are a lot better than store made chocolate chip cookies with lots of refined sugar. So if you have 30 minutes to spare try your hand at these jummy muesli bites!

60g dried fruit in little pieces – I used raisins but mango, or dates would also work
80g goji berries
250g muesli or large flaked oatmeal
2 tbsps. sesame seed
2 eggs
6g baking powder
150g syrup – I used natural syrup based on applejuice and beetjuice. Alternatively, and a perhaps a better alternative if you want harder bars instead of bites, is honey.
50g of coconut oil or butter

Muesli bites 091. Gather all your ingredients

Muesli bites 102. First, preheat the oven to 180°C/355F.

Muesli bites 113. Secondly, you’ll need a big bowl. In the bowl mix the dried fruit of your choice, the goji berries, the muesli/oatmeal and the sesame seed.

Muesli bites 124. Add the eggs and the baking powder.

Muesli bites 055. Mix well with a large spoon.

Muesli bites 036. In a saucepan heat the honey/syrup and coconut oil until the oil has melted.

Muesli bites 047. Directly stir through the muesli mixture.

Muesli bites 078. Spoon the mixture onto a griddle coated with greaseproof paper; Flatten with the back of a spoon.

Muesli bites 089. Bake the bites golden brown in 20 to 25 minutes. My oven is crazy fast so mine were somewhat on the crispy side (leaning to burnt ;)) so set your timer on 18-20 minutes and check every minute or so to see if they are ready.

If you used syrup you’ll notice that you won’t be able to cut nice bars, but you do however have nice little bites that are perfect for when you need a sweet kick!
